We had a party at the weekend and while I stuck to mainly WW foods for myself, I did lots of party-foods for the others. Included in that list is a carrot cake – Jo’s recipe – which I promise to publish here at some point.
I had just one piece of it and have to say, it was yummy and worth the extra 20 mins on the treadmill. It was moist, full of sticky fruit and carrot strands, delicate, light and with a slight tang to the icing (without being sickly). Just what I had craved a couple of weeks ago, just what I remember carrot cake to be like…and very, very more’ish. (So, the remaining carrot cake and (‘blooming brilliant’) chocolate brownies have been brought into the office, some packaged up for friends, some sent with the neighbours so that I don’t eat more…and more…and more).
